The Quality Controller is responsible for ensuring that all food items, ingredients, and kitchen processes meet the restaurant’s quality, hygiene, and consistency standards. This role focuses on maintaining authentic South Indian taste, proper food safety practices, and consistent presentation across all dishes. The Quality Controller works closely with chefs, kitchen staff, and management to monitor preparation methods, ingredient quality, and service standards.
Key Responsibilities
Food Quality Assurance
Monitor the preparation and cooking of South Indian dishes (e.g., dosas, idlis, vadas, sambar, chutneys, curries) to ensure consistent taste, texture, and presentation.
Conduct regular taste tests and quality checks during food preparation and service hours.
Ensure recipes and portion sizes are followed according to the restaurant’s standard guidelines.
Verify freshness and quality of ingredients such as spices, lentils, rice, vegetables, and coconut products.
Hygiene and Food Safety
Ensure compliance with food safety standards and local health regulations.
Monitor kitchen cleanliness, food storage practices, and proper labeling of ingredients.
Ensure staff follow hygiene protocols including handwashing, proper attire, and sanitation procedures.
Supplier & Ingredient Quality Control
Inspect incoming raw materials and supplies to confirm they meet quality standards.
Work with suppliers to maintain consistent ingredient quality, especially for key South Indian ingredients.
Report and address any quality issues with ingredients immediately.
Process Monitoring
Check food preparation processes to maintain authenticity and consistency.
Monitor cooking equipment and ensure it is used and maintained properly.
Identify areas where preparation or cooking methods can be improved.
Documentation & Reporting
Maintain quality checklists and inspection records.
Report quality issues, corrective actions, and improvement suggestions to management.
Track customer feedback related to food quality and recommend improvements.
Staff Training & Support
Guide kitchen staff on maintaining food quality standards.
Assist in training new staff on recipes, preparation methods, and presentation standards.
Promote a culture of quality and attention to detail in the kitchen.
